Homemade Dukkah

Spice blends are the heart of every great kitchen. They not only add depth to dishes but also bring cultures and traditions straight to your plate.


One particularly exciting blend is Dukkah – a delicious, nutty mix from Egypt that is incredibly versatile.


The mixture typically consists of roasted nuts (usually hazelnuts or almonds), seeds (like sesame, coriander, and cumin), and spices.


What makes Dukkah truly special is when you make it yourself. Anything you create by hand has a unique value. It's not just about the flavor – it’s about the entire experience: selecting the ingredients, roasting, and grinding them.


This process gives the blend a personal touch and makes it taste unbeatable.

Store-bought Dukkah is standardized, but when you make your own, you can customize it exactly to your liking. More cumin? Extra sesame? Maybe a pinch of chili for some heat? Your mix, your taste! Below you'll find my favorite recipe.


Have you ever tried Dukkah?

 

Ingredients:

  • 50 g sunflower seeds

  • 25 g sesame seeds (toasted)

  • 25 g pistachios

  • 1 handful almonds

  • 1 tsp coriander seeds

  • 1 tsp cumin seeds

  • 1 tsp fennel seeds (optional, for a sweet-spicy touch)

  • ½ tsp salt and chili flakes

 
  • Yields: 1 jar

  • Effort: Low The preparation is very simple. Important: Be careful not to burn anything!

  • Nutritional Value: Strong Each serving is rich in healthy fats, protein, and fiber – perfect as a versatile topping or aromatic seasoning.

  • Michaela's Note: The scent of freshly roasted nuts and spices fills the kitchen and builds up the anticipation for the finished Dukkah. Definitely a must-try!!


Instructions:

1) Preheat the oven to 160 °C (fan) or 180 °C (top/bottom heat).


2) Spread the sunflower seeds, almonds, pistachios, coriander seeds, cumin seeds, fennel seeds, and sesame seeds on a baking tray and roast for about 12 minutes, until fragrant. Stir occasionally to prevent burning.


3) Let the roasted ingredients cool down.


4) Coarsely grind everything – either using a mortar and pestle or a spice grinder with short pulses.


5) Season with salt and chili flakes.


6) Store in an airtight jar and use as desired!

 
  • Michaela's Tip: Homemade Dukkah is a true all-rounder. It's perfect served traditionally with bread and olive oil, sprinkled over salads and bowls, or used as a crust for fish and tofu. There are no limits to your creativity!
