Homemade Raffaello with Carrots & Oats
So. Delicious. I absolutely love my homemade Raffaello-inspired coconut balls.
But let’s be clear—these treats have nothing to do with Ferrero’s coconut-almond candies.
And that’s a good thing! Instead of sugar, butter, chocolate, or powdered sugar, my coconut balls are packed with wholesome ingredients like carrots and oats.

Ingredients:
100 g carrots
20 g shredded coconut
50 g oats
40 ml maple syrup
10 g vanilla-flavored protein powder
70 g coconut milk (the solid part)
Extra shredded coconut for coating
Servings: Approx. 8 balls

Instructions:
Grate the carrot and use a kitchen towel to squeeze out the excess moisture.
Mix the grated carrot with the remaining ingredients, making sure to use only the solid part of the coconut milk (it’s best to chill the can beforehand).
Shape the mixture into balls and roll them in shredded coconut. Done!
Store in the fridge and enjoy whenever you like.
