Innovation, sustainability, and a look ahead to what 2025 holds

What’s on the table in 2025?

The world of food never stands still – trends come and go, and our food is becoming more diverse, sustainable, and tech-driven. Last year, I explored the major developments for 2024, and now it’s time to look forward: What can we expect in 2025?


I’m excited to share the most interesting trends that will shape not only our plates but also our awareness of nutrition. From fermented cheese to personalized nutrition, here's everything that makes the new year so exciting.

 

1. Plant-Based Innovation: More than just meat substitutes

Let’s be honest: Meat alternatives have never been more prevalent. 2024 was filled with “Beyond Meat” and similar products, but 2025 takes it even further.


The next generation of plant-based alternatives is getting smarter and will soon taste so good, you might not even tell them apart from the original.


I’ll admit: I’m not the biggest fan of processed vegan products. Not everything plant-based is automatically healthy. Many of these products often contain more fat and less protein than you might think.


Instead, I rely on tempeh, tofu, and above all: good, old legumes. In 2025, making the most of the diversity of plant-based protein sources will be key.

2. Fermented Foods: Good for your gut, good for your heart


Fermentation is making a big comeback. Products like kombucha, kimchi, and sauerkraut are in high demand – and for good reason. They promote a healthy gut flora and offer a variety of health benefits. In 2025, fermented vegan cheese will also play a bigger role. This cheese, made with starter cultures, has a lot to offer in terms of taste.


I’ve tried my hand at fermentation and was amazed by the results. A fermented blue cheese that, while requiring patience, was a full success in terms of flavor. 3. Insects as a Protein Source: The crunchy future

Insect protein will become even more relevant in 2025. Mealworms, grasshoppers, and other insects are rich in protein and require far fewer resources than conventional meat production. While the idea may still seem unusual to many, insect protein could soon become a sustainable alternative to other animal products.


I’ve tried it – insect protein is surprisingly easy to incorporate into your meals. A little mealworm flour in bread or crunchy grasshoppers as a salad topping – it’s an interesting option for those who want to make their protein consumption more sustainable.


 

4. Personalized Nutrition: Your body, your menu


The trend of personalized nutrition will continue to grow in 2025. With apps and gadgets, you can monitor your blood sugar levels, and smart devices offer more ways to tailor your diet to your individual needs. But for me, this all still feels very futuristic.


To get the most out of my diet, I still rely (for now!) on proven superfoods like local beets, plenty of vegetables, nuts, and sometimes spirulina or matcha. These natural foods offer a wealth of nutrients without the need for high-tech monitoring.

 

5. Regenerative Agriculture and Zero Waste: The sustainability boost


Sustainability will remain a major focus in 2025, but the conversation goes beyond organic and local foods. Regenerative agriculture and zero waste are at the forefront. Companies that reduce or avoid food waste are highly valued.


I find the developments in the bakery industry particularly interesting, where stale bread is processed into flour to create new products. Or vegan bakeries that transform vegetables, which would normally be discarded, into delicious cakes. These ideas are not only sustainable but also show how creative the food industry can be.

 

6. Alcohol-Free Drinks: Kombucha as the new favorite

Alcohol-free spirits will continue to be trendy in 2025. More and more people are choosing to drink less or no alcohol at all, and the range of alcohol-free alternatives is growing. Despite their popularity, the experience often falls short of expectations.


My tip: Try kombucha instead. This fermented drink offers a natural alternative to soft drinks and alcohol-free spirits without tasting artificial.
