Healthy Salad with Carrot, Celeriac, Apple, Walnut, and Date
You all know Waldorf salad, right? Originating in the upscale Waldorf Hotel—one of New York City's most famous hotels—the delicious salad made from apples, carrots, and celeriac has become a classic.
These simple ingredients are typically coated in generous amounts of mayonnaise, and the recipe remains a beloved staple.
Carrot, celeriac, and apple complement each other wonderfully in terms of flavor, if only it weren't for the high-fat mayonnaise...
There are also a few ingredients that can really bring the salad to life, and I'm certainly not the only one tweaking the traditional Waldorf salad these days.
I enhance the salad with dates and walnuts—ingredients not found in the original recipe—and a light, healthy yogurt dressing. While I could never compete with the Waldorf Hotel, I certainly can with this delicious and mindful salad variation. ;)

Ingredients for the salad: 6 carrots
1/2 celeriac
1 large apple
35 g walnut halves
5-6 dates
Parsley
Lemon juice
Ingredients for the dressing: 170 g yogurt (3.5% fat)
3 tbsp lemon juice
2.5 tbsp olive oil
2 tbsp honey
A pinch of mustard
1 clove of garlic
Salt, pepper, roasted sesame oil
Servings: 2 portions
Effort: Low A bit of arm workout while grating the vegetables is needed, otherwise everything goes quickly.
Nutritional value: Strong Packed with vitamins and minerals for a balanced and nutrient-rich power salad with nuts, dates, and a figure-friendly yogurt dressing.
Michaela's Opinion: No wonder the salad is celebrated and recreated worldwide. A spicy-sweet flavor combination that is truly satisfying.
Instructions:
1) Wash and dry the carrots and apple, then grate them using a grater. Peel the celeriac and grate it finely as well. Alternatively, you can julienne the vegetables/fruits.
2) Drizzle with some lemon juice and mix in chopped dates, walnut halves, and parsley.
3) For the dressing, mix the yogurt with a small, pressed clove of garlic. Add lemon juice, salt, pepper, olive oil, honey, mustard, and a bit of the roasted sesame oil, and season well.
4) Stir the dressing into the salad and chill. It's best to let the salad marinate for a bit to enhance the flavor. Then enjoy with some parsley on top.
Michaela's Tip: Variations of Waldorf salad are versatile, and you can mix in chicken, pineapple, pomegranate seeds, smoked fish, Gorgonzola, etc. Depending on your choice, select a suitable marinade.
