In Amsterdam, I had to settle for supermarket tomatoes, but now I want to share a fantastic idea with you to turn even these tomatoes into a culinary highlight.

Imagine: cocktail tomatoes, lightly sautéed to improve their digestibility and better release their nutrients.

But the real star of this dish is the combination with a creamy feta cream. This contrast between the warm, sweet taste of the tomatoes and the cool, smooth cream perfectly ushers in the summer and brings a piece of garden freshness to your plate.

A quick, simple recipe that highlights the unique charm of your own tomatoes.

  • 450 g cocktail tomatoes

  • 1 tbsp oil

  • Salt, pepper, garlic

  • 200 g feta

  • 3 tbsp Greek yogurt

  • 3 tbsp organic lime juice + zest

  • 1 tbsp oil

  • Pepper

  • Basil for garnish

1) Heat oil in a pot. Add tomatoes and sauté for 5 minutes.

2) Add salt, pepper, and garlic, continue sautéing briefly, then set aside.

3) Blend feta, lime juice, oil, and yogurt until creamy. Season with pepper and lime zest.

4) Spread the feta cream on a plate and top with the tomatoes. Garnish with oil and basil, and enjoy.

  • Michaela's Tip: When using lime zest, be sure to use untreated limes and wash them thoroughly before zesting.
