Oven-Roasted Grapes on Crispy Chia Whole Grain Bread with Pure Peanut Butter
This recipe is… different. It’s similar to an Italian crostini with grapes—THE classic antipasti—just with a twist.
Tender roasted grapes rest on a creamy layer of pure peanut butter (100% peanuts, no additives) and crispy whole grain bread.

Ingredients:
2 slices of whole grain spelt bread
200 g seedless grapes (mixed red and green)
3-4 tbsp pure peanut butter (no additives)
Olive oil, salt, honey
Optional: A handful of almond slivers and some fresh mint
Serving: 1 portion
Effort: easy The grapes take about 20 minutes in the oven.

Michaela's Opinion: A healthy, simple, and incredibly delicious treat!

Instructions:
1) Wash the grapes, pat them dry, and place them on a baking tray lined with parchment paper. Drizzle with a little olive oil, salt, and honey.
2) Roast the grapes at 180°C (350°F) for about 20 minutes until they soften and slightly burst.
3) Slice the bread, toast it until crispy, and spread 1.5 - 2 tbsp peanut butter on each slice.
4) Optionally, separate the grapes from the stems and place them on top of the bread. Garnish with almond slivers and mint, then enjoy!
Michaela's Tip: You can also refine or switch it up with ricotta, goat cheese, or buffalo mozzarella.
