Marinated Baked Celery Root with Apples, Fresh Herbs, and Cream Cheese
I thought I knew celery root. I’ve always loved its delicate, savory flavor and used it in salads, soups, and casseroles—typically crafting humble, down-to-earth dishes.
But I wanted to change that, to give celery root a new spotlight and transform it into a comforting yet refined dish with a hint of exotic flair.
So, I marinated diced celery root in a soy sauce and honey marinade, then let it roast to tender perfection in the oven. Toward the end of the baking time, I added some locally sourced apples to the tray.
Let me tell you, this baked celery root with roasted apples is out-of-this-world delicious! Topped with a dollop of cream cheese and fresh herbs, it’s guaranteed to melt your heart.

Ingredients:
1 celery root
2–3 small apples
½ lemon
Celery root marinade:
3 tbsp soy sauce
3 tbsp butter
2 tbsp balsamic vinegar
4 tbsp honey
Salt, pepper

Michaela's Opinion: Celery root has so much more flavor than I ever expected. This combination is pure magic.
Instructions:
1) Preheat the oven to 190°C (375°F). Clean the celery root thoroughly and pat it dry. Cut it into large chunks, leaving the skin on (only remove the root base).
2) Melt the butter and mix it with the soy sauce, balsamic vinegar, honey, salt, and pepper to prepare the marinade.
3) Toss the diced celery root in the marinade until well coated. Spread it on a baking tray lined with parchment paper and pour any remaining marinade over the pieces.
4) Roast the celery root in the oven for about 20 minutes, then turn the pieces over.
5) Wash and dry the apples, then cut them into quarters. Drizzle with lemon juice. After the celery root has been roasting for 40 minutes, add the apples to the tray, ensuring everything gets another toss in the marinade.
6) Continue roasting the celery root and apples for another 10–15 minutes, or until both are tender.
7) Serve the roasted celery root and apples garnished with fresh herbs, along with a side of herb cream cheese as a dip. Enjoy this comforting, soul-warming dish!
Michaela's Opinion: For an impressive presentation, roast the celery root whole. However, be prepared for a much longer cooking time—about 3 hours in the oven.
